The Rockhouse Hotel in Negril, Jamaica, has appointed Kingston-based chefs Michelle and Suzanne Rousseau as culinary directors of the Rockhouse Restaurant.

Beginning the first week of June, the Rousseau sisters will introduce a refreshed menu for the clifftop dining destination, blending distinctly Caribbean flavors with Mediterranean influences.

Working alongside executive chef Jermaine "Bagga" Forrester, the sisters will debut a menu featuring dishes like curried ackee wontons and callaloo tortelli as well as Rockhouse classics like coconut shrimp. Many ingredients will be sourced directly from local fishermen and the hotel's onsite hydroponic greenhouse.

The transition officially kicks off June 5 during the Rockhouse Foundation's Coastal Culinary Weekend. This immersive event features the Rousseaus alongside chef Andre Fowles and Michelin Young Chef Award winner India Doris for a series of dinner parties and cultural tours.

Proceeds from the launch weekend will support the Rockhouse Foundation's work in childhood education.
