Grand Cayman's One | GT is officially accepting reservations for May 2026, adding to the island's boutique hospitality sector.
Part of the Small Luxury Hotels of the World (SLH), the property features 96 condo-style hotel suites designed for the modern "bleisure" traveler. Every unit is equipped with a full kitchen, a spa-inspired bathroom and a private balcony.
The crown jewel of the development is its lifestyle-rich rooftop, which officials say is the only one of its kind on the island. Guests have exclusive access to an infinity pool, a Technogym fitness center and private butler services. The hotel also serves as a cultural gallery, housing a permanent collection of curated local artwork.
Under the direction of executive head chef Rene Cahane, whose three-decade career spans Michelin-level kitchens in the U.K., France and the Caribbean, One | GT introduces a trio of distinct culinary concepts:
- Perle: A sophisticated French-Mediterranean destination featuring an open-concept kitchen and elevated coastal fare.
- Byu: A high-energy rooftop lounge serving Asian-fusion plates and avant-garde cocktails against panoramic Caribbean views.
- Cafe Bellini: An Italian-style bakery and artisanal coffee hub designed to serve as a communal center for guests and locals alike.
