Famous Chef Creates Menu for McKinley Explorer Rail Cars

SEATTLE -- Chef Reiner Greubel, who has developed menus for such establishments as the Oriental Hotel, Bangkok, and New York's Winter Garden Cafe and Hudson River Club, is taking his talents onto the railway tracks.

Greubel has created new dishes to be served on the McKinley Explorer rail cars of Holland America Line-Westours, which carry guests between Anchorage and Fairbanks through Denali National Park.

The selections, according to Greubel, will reflect the "flavor and uniqueness of Alaska."

There is, for instance, a brakeman's breakfast, consisting of scrambled eggs and country-style potatoes with Alaskan reindeer sausage or honey ham.

And the summer fruit plate is heavy with berries grown in the 49th state.

Lunch fare will include a chilled Alaskan halibut salad, and dinner will feature Alaska shrimp newburg on rice.

Denali chicken, served with assorted sweet bell peppers, red onions and sliced tomatoes, is one of Greubel's American Heart Association-approved light dinners, low in fat and cholesterol.

The McKinley Explorer excursion is included on most of the operator's 35 cruise-tour programs.
