The TWA Hotel at New York's Kennedy Airport has brought in
Gerber Group to manage its Sunken Lounge, the flagship bar at the 512-room
hotel scheduled to open May 15.
Gerber Group owns and operates cocktail bars and restaurants
in New York, Atlanta and Santiago, Chile, including New York City hot spot Mr.
Purple, which is perched atop the Hotel Indigo Lower East Side, and The
Campbell, located inside Grand Central Terminal.
Drawing inspiration from the space's 1960s origins, the
Sunken Lounge will offer a variety of cocktail favorites from the era, such as
a classic old fashioned made with whiskey and bitters, and an Aviation,
made with crème de violette, maraschino liqueur, gin and lemon juice.
The bar will also sling several original cocktails, each
garnished with colorful swizzle sticks modeled after original TWA plastic
stirrer designs. A selection of small-batch spirits, wine, regional craft beers
and a menu of "elevated bar fare" will also be served.
The venue's floor-to-ceiling windows will offer views of a
vintage 1958 Lockheed Constellation plane parked outside. The aircraft is being
repurposed as part of the TWA Hotel development and will house a separate
cocktail lounge.
In total, the TWA Hotel will have six restaurants and eight
bars onsite, including the Georges Vongerichten-led Paris Cafe.
The TWA Hotel began taking reservations earlier this month.
