Windsong Resort in Turks and Caicos has officially opened Pelago, a new rooftop dining venue overlooking Grace Bay in Providenciales, Turks and Caicos.
The restaurant, which takes its name from the Greek word for "the open sea," represents a strategic expansion of the resort's amenities. While the resort has historically been recognized for its proximity to offshore snorkeling and luxury suites, the introduction of Pelago shifts its focus toward high-altitude hospitality.
The restaurant pivots from breakfast and lunch service to a full-scale evening destination as the sun sets. The menu centers on Mediterranean cuisine infused with Asian flavor profiles, highlighted by dishes like the hot Smoked Peking Duck breast.
The venue's debut follows a trend of "vertical sanctuary" dining in the Caribbean, aimed at travelers seeking more secluded environments, while maintaining beachfront views. By situating the restaurant on the roof, the property now offers a 360-degree vantage point of the coastline, distinguishing it from the other beachfront restaurants along Grace Bay.
