Holland America Line will add pop-up restaurants on six of its ships using the format of the seafood brasserie Sel de Mer found on its most recent ship, the Koningsdam.
The restaurants will be appearing later this year on the Eurodam, Nieuw Amsterdam, Noordam, Oosterdam, Westerdam and Zuiderdam.
They will appear once per cruise on voyages of seven days and twice on voyages of 10 days or longer in the Pinnacle Grill alternative dining venue, which will be transformed into an intimate brasserie with custom decor, plates, menus and uniforms reflecting the ambiance of the original Koningsdam restaurant.
The restaurants, called Rudi's Sel de Mer in honor of HAL's master chef and culinary consultant Rudi Sodamin, will feature a specially crafted cocktail and wine menu. Sodamin has also created designs for show plates for the restaurants called Food Faces, which portray works of art assembled from various types of food.
