Colibri Boutique Hotels has teamed up with Copenhagen culinary heavy-hitter, Noma. From April 12 through May 28, Noma Mexico will take up residency just steps from La Zebra boutique hotel in Tulum.
The Noma Mexico pop-up will see Rene Redzepi reunite with friend and former sous-chef Rosio Sanchez to develop a new and original menu using only local ingredients. The team has already begin to develop its vision, traveling across the country from Mexico to Ensenada, Chiapas to Puebla, Oaxaca to Guadalajara, and throughout the Yucatan.
