The Morimoto Las Vegas at the MGM Grand Hotel & Casino has reopened with a new look and feel, plus new menu items. The Japanese restaurant had closed in early October for a redesign and menu renewal.
The MGM Grand said "a new Japanese dining experience emanates the energy of Tokyo's famous nocturnal scenes."
The sushi bar is backlit with "Japanese brushstrokes of magenta, vermillion and electric violet," and the main dining room "blends visual cues of Tokyo's rain-slicked streets with charred wood that nods to traditional Yakisugi craftsmanship. Lantern-lit tables balance the restaurant's high energy with a soothing and jovial atmosphere."
Chef Masaharu Morimoto said the redesign of his restaurant "harmonizes the soul of Las Vegas and Tokyo's electric designs, buzzing streets and our shared love for the art of food."
Highlights of the new menu:
• Land & Ocean Roll: Smoked sushi roll with wagyu beef, sweet shrimp, crab and tobiko.
• Chef's Combination Sushi: Morimoto's "stained glass window" technique offers customizable rolls with a variety of fresh fish and other ingredients.
• Pork Sticky Ribs: Morimoto's special ribs preparation featuring sweet chili and hoisin sauce.
• Lobster Bao Bun: A pillowy bao filled with lobster tail and served with a spicy aioli.
• Teppanyaki Bar: Iron grill preparation of meats, seafood and vegetables, customized to order with add-ons of yakisoba noodles and foie gras.
• Dessert Bento Box: An assortment of mini desserts to share, including hazelnut tiramisu, strawberry cheesecake, coconut panna cotta, pistachio profiterole and yuzu meringue tart.

The restaurant features new cocktails such as the Emerald Dragon (Peach Soju shaken with midori, yuzu juice, lime juice and yuzu white peach soda); the Morimoto Kofu Old Fashioned (Iwai Japanese whisky combined with Kuro Aato and Japanese brown sugar); That's The Tea (Haku vodka stirred with ceremonial matcha, lemon juice and mint) and Hibis-Kiss (Flecha Azul reposado mixed with yuzu juice, hibiscus and orange liqueur).
Morimoto Las Vegas is open 5 p.m. to 10:30 p.m. Friday and Saturday and 5 p.m. to 10 p.m. Sunday through Thursday. The restaurant is in The District at MGM Grand.
