Celebrated chef Nobu Matsuhisa has opened a 140-seat restaurant in Paris Las Vegas, his second Strip location and third in Las Vegas.

Nobu features fresh fish and seafood with nigiri and sashimi, salmon, toro, clam and sea urchin. Yellow tail sashimi with jalapeno, black cod dry miso and wagyu tacos are also among the Nobu classics on the menu. Vegan, vegetarian and gluten-free dishes are also offered.

"I look forward to sharing some of my favorite dishes and introducing a few signature creations in this beautifully designed space to all of the Las Vegas visitors from around the world," Matsuhisa said.

Nobu at Paris Las Vegas, adjacent to the newly opened Bobby's Burgers, is open from 5 p.m. to 10 p.m. nightly.

Matsuhisa also has restaurants in Caesars Palace and Virgin Hotels Las Vegas (formerly the Hard Rock).
