The Flamingo Las Vegas will open Bugsy & Meyer's Steakhouse, an homage to the resort's roots, in early 2020.
Notorious mobsters Benjamin "Bugsy" Siegel and Meyer Lansky opened the Flamingo in 1946, the first resort-style hotel on the Strip. The Lansky family is involved in the steakhouse and is helping to create unique merchandise.
"With Bugsy & Meyer's Steakhouse, we want our guests to feel as if they've traveled back in time to when the Flamingo Las Vegas first opened, with glamour, class and intrigue, but positioned in today's world with modern touches," said Eileen Moore-Johnson, Flamingo Las Vegas regional president. "This steakhouse will be a destination dining experience complete with statement menu items, classic dishes and unexpected finds you may need to 'know a guy' to order."
Bugsy & Meyer's Steakhouse will be situated across from the Flamingo Wildlife Habitat main entrance, in the former Center Cut, Cafe to Go and Laurel Lounge spaces.
The menu will include steakhouse classics and tableside presentations. A glass-encased show cooler will display domestic prime, dry aged prime, imported wagyu and a signature 60-day Chicago cut bone-in ribeye. Seafood will also be featured. Crudo, poke and tataki will also be prepared in front of guests.
The steakhouse will have a "bakery" facade designed to provide the illusion of discreetly entering through the back of an establishment. Designed by Studio K Creative of Chicago and Jonathan Adler, the $10 million restaurant will include a bar, patio dining, three private dining rooms and a raw bar.
The oval main bar will have rich woods, greenery, airy textures and flamingo artwork. The main dining room features a mix of natural and chic styles, including light and dark woods with bright jewel tones in decor and seating. The private dining rooms will seat from 16 to 24 guests each but when used as one, they can accommodate close to 60.
Hidden away is the Count Room, an intimate speakeasy and private bar and lounge with an expanded specialty cocktail menu. It will have an exclusive food menu with what the Flamingo describes as playful takes on traditional dishes.
Lining the walls will be historical images, including photos from when the Flamingo opened.
