Aqua Expeditions named Benjamin Cross as consulting chef for its new expedition yacht, Aqua Blu, which launches in east Indonesia this November.
The vessel is the first non-river ship for Aqua Expeditions, which currently operates on the Mekong and the Peruvian Amazon.
Born in Australia and based in Bali since 2008, Cross' culinary background includes cofounding the award-winning Urbane restaurant in Queensland and working at Spain's three-Michelin-starred Can Fabes restaurant before settling in Bali where he has opened several restaurants.
On Aqua Blu, Cross said he will source ingredients primarily from Bali and East Indonesia including indigenous spices such as nutmeg and cloves and sustainably caught seafood.
"Harnessing the abundant gifts from Indonesia's land and seas, the goal of my concept is to orchestrate a refined rendition of flavors that have travelled through Indonesia's fabled sea spice trade route - an amazing confluence of Asian, European and traditional local cooking philosophies and methods," Cross said.
