National Geographic/Lindblad Expeditions said it has hired
its first culinary naturalist, Francis Lam, the host of public radio's "The
Splendid Table" and editor-at-large at Random House imprint Clarkson
Potter.

Lam will sail on two 14-day National Geographic Orion cruises
departing June 22 and Aug. 13 to Iceland and the Shetland, Orkney, and Faroe islands.
In 2014, Lam visited the Faroes on assignment for Bon
Appetit, and his article introduced American foodies to this new, unlikely
destination for gourmets, Lindblad said.
In his role as culinary naturalist, Francis will choreograph
several experiences and excursions, both off and on the ship, and introduce
guests to fermented lamb, foraging (since there's so little agriculture), and
turnips that taste like cantaloupes, Lindblad said.
