Namron Hospitality has launched a slew of new culinary concepts and menus at several of its Tulum and Mexico City hotels.
NU at La Valise Tulum, one of the first restaurants in Mexico recognized by the Michelin Guide, has released a reimagined menu inspired by memories from its culinary team. Each course, cooked over an open flame, will be accompanied by a letter explaining the backstory and intention behind the dish.
At sister hotel Encantada Tulum, the restaurant Climo now offers a taste of Italy. The menu's offerings blend contemporary Mexican cuisine with Sicilian techniques, serving handmade pastas, wood-fired pizza and fresh seafood.
Another Tulum property, Xela, has unveiled a spirit-forward dining concept at its Izakaya restaurant. Inspired by the Japanese tradition of connection through gathering, the venue offers contemporary Asian flavors that meet coastal Mexican influences. Menu items include a variety of sushi, sashimi, maki and nigiri, along with more than a half-dozen starters.
One of the newest additions to the Namron collection is Hotel Alexander inside Mexico City's Torre Virreyes de Chapultepec skyscraper. Having earned cachet for the aptly named Caviar Bar, the concept and name have changed to the Alexander Bar. While retaining its nature as a true caviar hub, the restaurant has since evolved into a cocktail and social venue led by chef Ana Sophia Serrano.
Housed in a refurbished presidential palace in Mexico City is El Cortes, home to a contemporary European restaurant named Lotti. Blending in rich Mexican flavors, Lotti is the first solo project of Swiss chef Luc Liebster, with a menu that includes chicken cordon bleu, braised lamb and wagyu filet.
