Bacchanal Buffet at Caesars Palace in Las Vegas will reopen for dinner Thursdays through Mondays from 4 p.m. to 10 p.m. starting on May 20.

Closed for more than a year because of the pandemic, Bacchanal Buffet at Caesars Palace will reopen May 20 with a multimillion-dollar redesign, more than 30 new dishes and the introduction of reservations.

When it opened in 2012, the $17 million Bacchanal Buffet helped set a new standard for buffet service in the city. A team of specialized chefs oversaw the preparation of the global cuisine in nine open kitchens.

Caesars asked the buffet's original designer, Tetsuo Aoyagi of Tokyo, to assist with Bacchanal's transformation. Textures and materials such as glass and stone, reminiscent of ice caves and mountains, retain Aoyagi's concept of nature in the dining room.

The new design enhances guests' views of the kitchens. Open-fire roasting grills are used to prepare prime rib and other premier cuts. Other steaming and refrigerated display systems will ensure dishes such as crab legs are served market-fresh.

Among the additions:

• Dim sum-style food carts will roam the dining room, offering trendy dishes such as foie gras, spicy seafood boil bags and Japanese wagyu hot dogs.

• Turmeric grilled baby octopus with XO chili jam, cheeseburger bao, chipotle bourbon barbecue oysters and duck carnitas quesadillas will be among the composed dishes.

• Plant-based and vegan items will include quinoa-stuffed baby sweet potatoes with fried kale, tomato tartar and coconut-carrot gazpacho.

• Desserts to be offered will be Earl Grey mousse, salted caramel popcorn and death-by-chocolate cupcakes.

Bacchanal will be self-serve with all required health and safety protocols, a Caesars spokeswoman said. Those include changing utensils every hour, employees actively watching guests at each station, hand sanitizer at each station and no eating while in line. Caesars has also implemented a health-screening program for employees, all of whom must continue to wear masks.

"Bacchanal Buffet at Caesars Palace has been a world-renowned culinary destination for many years,"  said Sean McBurney, Caesars Entertainment regional president. "We are incredibly proud of all the work we have put into it over the past 14 months, from the design and construction to the research and re-engineering of the menu. We look forward to welcoming our guests back and seeing their faces light up when they experience and, most importantly, taste all the new enhancements."

Bacchanal will reopen with dinner from 4 p.m. to 10 p.m. Thursdays through Mondays.

Although not required, reservations can be made through OpenTable.
