Two Denali lodges introduce fully local menus

In an expansion of ongoing sustainability initiatives, Camp Denali and North Face Lodge now feature menus sourced entirely from Alaska producers.

This season marks the first time that the sister lodges, set one mile apart on private land surrounded by Denali National Park and Preserve, have featured 100% Alaska-grown meat, poultry and seafood.

The culinary team established an on-site greenhouse and outdoor, raised-bed gardens 25 years ago, in an effort to add more homegrown vegetables and herbs to menus. Over the past 10 years, new partnerships with small producers such as Denali Organic Growers and Rosie Creek Farm have supplied additional greens and root vegetables.

Nightly dinners at the properties spotlight meat or fish from responsibly farmed and wild-caught sources, including Susitna River salmon from Su Salmon Co., beef and pork from the Delta Meat and Sausage Co., and poultry from Homer's Blood Sweat & Food Farms.

Camp Denali and North Face Lodge kitchens also turn out breads and pastries baked each day, along with preserves made from local berries. The lodges compost food and yard waste, and feed non-compostable food scraps to sled dogs near the park entrance.
