The Royal Hawaiian, a Luxury Collection Resort, has promoted one member of its culinary team in addition to recruiting a former Hawaii resident to return to the Aloha State.
Chef Shaymus Alwin has risen to the role of executive sous chef for the property, while Shingo Katsura will take Alwin's former post as chef du cuisine of signature restaurant Azure. Alwin will assist Executive Chef Colin Hazama with the hotel's entire culinary operation.
Katsura was born in Japan before moving to Hawaii, and graduating from Moanalua High School. Katsura joins the Royal Hawaiian from Roots & Rye in San Jose, Calif., where he most recently served as executive chef.
The Royal Hawaiian, opened in 1927, houses several dining options at its Waikiki location, including Azure, Mai Tai Bar and A Royal Hawaiian Luau -- Aha Aina.
