You're 1,000 feet from the ground on the 108th floor of the Stratosphere Hotel and Casino's signature spire, and you could really use a snack. That's the scenario chef James Trees is tackling with 108 Eats, a fast-casual eatery housed on the observation deck level of the North Strip casino.
Opening in late December, 108 Eats will offer panini, snacks and ice cream to guests enjoying the views of the Strip and its surroundings. The menu includes porchetta panini with rapini and provolone, chili cheddar popcorn and ice cream flavors like pumpkin spice latte and brown butter pear.
Trees, who previously worked for Mina Group and Gordon Ramsay, opened his own restaurant in Downtown Las Vegas last year serving Italian soul food. Though you won't find rye tagliatelle with braised duck and mushrooms on the menu at 108 Eats, you can bet that a chef of Trees' caliber will be turning out excellent fare even at snack bar prices.
Go for the view, stay for the meatball panini.
