From Italy, there's Eataly, a culinary playground devoted to the land of ravioli and ricotta. From Chicago, there's Bavette's, a steakhouse with a vintage twist. From New York, there's NoMad restaurant, a more relaxed cousin to Eleven Madison Park. And now, from Los Angeles, there's a Roy Choi joint headed to the Park MGM/NoMad Hotel in Las Vegas.
One of 2018's most anticipated Strip developments just announced the addition of what's likely to be one of the year's most anticipated restaurants, an as-yet-to-be-named eatery from self-proclaimed "L.A. son" Roy Choi.
Choi is the mastermind behind the Kogi BBQ food trucks slinging Korean short rib tacos all over Los Angeles, which have birthed a budding culinary empire that today includes restaurants Chego!, A-Frame, Pot, Commissary and LocoL. In Las Vegas, the chef will celebrate his roots through a new concept at Park MGM dedicated to L.A.'s Koreatown.
"This restaurant will be full of soul and culture that is influenced by the energy of Koreatown in Los Angeles, my hometown," said Choi via press release.
Details are scarce, but the restaurant is expected to debut on the Strip in late 2018. The Park MGM is slated for a spring opening, with NoMad expected to arrive this fall.
