His acclaimed Vetri Cucina at Vegas' Palms Casino and Resort has been closed for months, but chef Marc Vetri has found another way to keep busy during the pandemic.
Vetri has opened the pop-up Osteria Fiorella at the Red Rock Resort in suburban Las Vegas. The eatery is described as an expanded version of his popular Philadelphia pasta bar, Fiorella, named after the famed family sausage storefront that Vetri recently acquired near the city's historical Italian Market.
The menu couples Vetri's elevated northern Italian sophistication with dishes inspired by his Italian-American upbringing in South Philly.
The casual menu includes antipasti, salads, pizzas made in a wood-burning oven, handmade pastas, meat and fish. Pastas include rigatoni with Fiorella sausage ragu and locatelli cheese; ricotta gnocchi with brown butter and crispy leeks; and spaghetti with Bianco di Napoli tomatoes.
The pop-up operates in the space normally inhabited by Terra Rossa and includes a bar, a patio and an open kitchen concept. Paper placemats are filled with reproductions of Vetri's vintage family photos.
Osteria Fiorella is open from 5 p.m. to 10 p.m. Wednesdays through Sundays for dinner service. No end date for the residency has been set.
