Curated Cabo experiences at the Pueblo Bonito Pacifica

Another day came to a close in Cabo San Lucas. I was sitting at the pool bar of the Pueblo Bonito Pacifica, sipping one of its signature mezcal cocktails, when I turned around to face the sea and saw the sky was on fire. Streaked with bright orange and pink, it was a magnificent, patented Pacific coast sunset in Mexico, and one of the best I've ever seen.

As far as sunset settings, there are few places better to catch them than from the shores of the Pueblo Bonito.

The Pueblo Bonito Pacifica Golf & Spa Resort sits on 2.5 miles of white sand, just 10 minutes from downtown Cabo San Lucas.

At the end of December, the property debuted a "resort within a resort" with the launch of the Towers at Pacifica.

These two luxury towers feature a total of 47 club-level guestrooms and suites that offer enhanced amenities like 24-hour butler service and access to a VIP lounge.

A third new building houses the gourmet restaurant Peninsula, which serves traditional Baja cuisine, and the Peninsula bar and beach lounge on the first floor. It also contains a fitness center with ocean views and, exclusively for tower guests, the Whale Watching VIP Lounge on the third floor.

What sets the Pueblo Bonito apart from other resorts is the one-of-a-kind experiences that its staff can curate for guests. One evening I was treated to a fireside barbecue dinner, complete with fresh tiradito, stuffed clams and fresh grilled fish, all underneath the stars.

The following morning I woke with the sun for fresh-brewed coffee on the beach and Pueblo Bonito's Hook & Cook experience. This interactive culinary activity is led by the resort's chef, Octavio Hernandez. Fishing rod in hand, I stood on the shore, casting into the waves to catch fish and craft them into my own ceviche.

Though my skills weren't quite up to snuff, Hernandez hooked a few live ones and proceeded to create a customized ceviche bar, complete with smoked salsas, infused oils and emulsions that I enjoyed beachside on a private, canopied daybed.

Other experiences that Pueblo Bonito can concoct are a guided mezcal or tequila tasting, private mixology sessions, cooking classes or an excursion to the San Miguel Blown Glass Factory in the village of El Arenal. Guests will be able to create their own custom blown-glass piece.

As part of the original resort, features and amenities include five restaurants on-site; six bars and lounges, including a poolside bar and swim-up bar; and 24-hour room service. There is the Armonia Spa for aromatherapy, Ayurvedic treatments, body treatments and scrubs, facials and more.
