The restaurant lineup at the Cosmopolitan is in the midst of a major shake-up, with Momofuku and Milk Bar arriving in January and high-end sushi and izakaya brand Zuma following close behind. With a fresh Japanese joint moving in, the resort's current raw-fish destination, Blue Ribbon Sushi Bar & Grill, will make room for a restaurant from the same team, chef/owners Bruce and Eric Bromberg.

Bruce and Eric Bromberg will open a new Blue Ribbon at Cosmopolitan, inspired by their original Blue Ribbon Brasserie in New York.
"We've seen great success with Blue Ribbon Sushi since the opening of the resort in 2010," said Bruce Bromberg via release. "We're excited to continue our tenure at the Cosmopolitan by mixing things up and introducing our classic American restaurant concept to Las Vegas locals and guests at the Cosmopolitan. We hope to move quickly through the construction and training process so we can re-open our doors in spring 2017."
In the spring, the Brombergs will open an eatery inspired by their New York flagship, Blue Ribbon Brasserie, which opened in SoHo in 1992. Simply named Blue Ribbon, the new restaurant will serve lunch, brunch, dinner and a late-night menu and will focus on modern American comfort food. Expect the staple dishes from the New York location, including bone marrow with oxtail marmalade, fried oysters and the signature fried chicken, which is worth a visit all by itself.
