Prime Steakhouse at the Bellagio gets a new look, new dishes

The elegant Prime Steakhouse, the renowned restaurant overlooking the Fountains of Bellagio, has revealed a new contemporary look and refreshed menu.

The living room-style lobby now features a Saint Laurent marble door frame, Baccarat-inspired carved glass, 1940s Parisian sconces and a host stand that calls to mind a fine jewelry display.

The cocktail lounge has French blue and caramel accents with Italian damask fabrics, handmade wall coverings, Venetian chandeliers, Baccarat-inspired carved glass and mirrors and Saint Laurent marble accents. The main dining room uses layers of drapery to create distinct areas.

"When Prime opened in 1998 with Bellagio Fountains as its backdrop, it shattered the ceiling of expectations for what a restaurant in Las Vegas could be," chef Jean-Georges Vongerichten said. "This next phase of Prime celebrates our history while foraging into the future with an aesthetic and refined flavors that will make you fall in love with the glamour of dining in Las Vegas all over again."

On the menu

The menu features cuts from American and Japanese farms. Sauces include soy rice wine, bearnaise and peppercorn. Sides include truffle mashed potatoes, glazed mushrooms and brussels sprouts prepared with prosciutto and pear mustard. The raw bar has shrimp, oysters, fish carpaccio, caviar and sushi. New entrees include truffle barbecue short rib with smoked bacon; Chilean sea bass; and Parmesan-crusted chicken with lemon butter and basil.

The restaurant operated in the former Picasso space since last September when the renovations began.
