Four Seasons Resort Oahu at Ko Olina taps new chef

La Hiki Kitchen at Four Seasons Resort Oahu at Ko Olina has a new leader introducing his own style to the restaurant's standard menus and lavish Sunday brunch.

Chef Simeon Hall Jr. joins the resort on the southwestern shore of Oahu from Treasure Sands Club in Treasure Cay, Abaco, where he was executive chef. Simeon was owner of Simeon Hall Restaurant Management Group, where he worked with companies around the Caribbean.

A proponent of locally sourced ingredients and strong partnerships with area farmers and producers, Simeon parterened with the Bahamas Marine and Science Institute on sustainability efforts while at his previous post. At La Hiki, Simeon has committed to sourcing more than 65% of his menu from local farms and fishermen, according to a statement.

Simeon employs a variety of techniques, such as canning, preserving and smoking, for his farm-to-table dishes, which include a new charcuterie board, sticky soy barbecue pork ribs with charred shishito peppers, crispy jerked wings and Maui Brewing beer roaster chicken.

La Hiki's Sunday Brunch for All Seasons will be refreshed with some new island-inspired dishes from Simeon, and there are also plans for monthly specially crafted dinners and live cooking demos.
